Know where your coffee comes from
We started buying coffee from Peru in 2019, from a lovely lady named Ludmila. Ludmila is part of a cooperative that sells coffee from a lot of producers who only produce little quantities of coffee (as it is the case in many countries of origin). Katrien visited the cooperative and farmers in 2019 before buying the coffee, as always.
This coffee comes from the San Pedro family, who are one of the producers who work through the cooperative of Ludmila.
Process: Yellow honey
Honey processed means that during the period of drying, the producers keep some mucilage on the bean. The color says something about the percentage of the mucilage. Yellow means less mucilage than Red or Black honey. Mucilage is the part that stays on (or doesn’t) after depulping the coffee cherries. With the depulping machine the producers choose how much mucilage they want to keep on the bean. With fully washed coffees all the mucilage will be removed from the bean before drying.
How it’s roasted
This coffee is roasted for espresso. Taste notes are: caramel, hazelnut with a medium acidity. It’s a very easy drinkable, lovely coffee.
