Carlos Mendez farm is located in the western region of El Salvador between the towns of Apaneca and Ataco at an altitude of 1,200 and 1,500 MASL. Cultivating his coffee strictly under the shade of native trees and managing the water supply by collecting rain water, they are specialized in the production of high quality coffee.
Did you know there are many different varieties of coffee trees? All with their own flavors and specific characteristics. It’s the first time we have a coffee from the Cuscatleco variety. A dwarf variety with large coffee cherries and beautiful big beans, created to be resistant against leaf rust by combining different Sarchimor variants (introgressed).
On espresso this coffee has a defined note of red fruit and cacao nibs and a medium acidity.
