Yanin Diaz worked on a coffee farm with his father since he was a young man. In 1998 he bought the El Paraiso farm, where he lives today with his wife, his two children and his father. In the last few years, he invested a lot of energy on experimental fermentation processes.
We roasted this coffee for filter. This coffee is fermented for 90-120 hours. This gives a sweet and full bodied cup with a juicy medium acidity of red currant.
