Step 1: Boil the water. Let it cool but use at least a temperature of 90 °C. Weigh 20grams of freshly roasted coffee beans and grind them medium coarse.
Step 2: Rinse your filter with hot water, empty the Chemex. Put the 20grams of coffee into the middle of the filter. Poor the hot water until all grinds or just covered with water. The coffee will start blooming.
Step 3: After 20 to 30 secs continue pooring in the middle of the filter bed. Don't poor on the walls of the Chemex as the water will slip between the filter and the walls and not pass through the coffee. Use a total of 320ml of water (weigh this on the scale to be exact! very important).
Step 4: As soon as 90% of the water has passed, remove the filter with the remaining water. Don't let the rest of the water dripping trough as this contains too much bitters.
Step 5: Relax, sit, let it cool and enjoy a great cup of specialty coffee!
